Mom's Potato Soup From: Patti Gore Category: Sidedish Chop any amount of ham you desire. I figure about a half cup per bowl. 2 medium onions chopped (baseball size) but you can use more if you like. 4-6 potatoes (2 chopped finely and the rest about the size of a thumb nail) 1 large can of canned milk 1/2 stick butter 1 finely sliced stalk of celery salt and pepper In a large, heavy pan cook the ham with the onions and celery until onions and celery are almost done. Add potatoes with enough water so they can cook , not scorch but not drown either. When potatoes are almost done add the butter, milk and salt and pepper to taste. If you have too much water do not drain... sinks do not appreciate the flavor just add instant potatoes ... enough to get the body you want. This does thicken fairly fast so be careful. If it gets too thick just add regular milk. Of course as you go back and forth getting trying to get the right consistency you may make enough to have a block party, then you will have to add more ham, onions and celery. LOL. This does freeze well.
