Sauerkraut Soup From: Don Thompson Category: Sidedish Between 1/2 lb. and 1 lb. of smoked sausage (Bob Evans) 6 Tbs. Chopped Onion 1/4 Cup Flour 1/2 tsp. dry thyme 1/2 tsp. black pepper 3 cups milk 1 cup Half & Half 8oz. can of sauerkraut w/juice 1 1/2 Tbs. lemon juice (optional) 2 Tbs. finely chopped parsley Chop sausage and onion, and brown for 8 minutes Mix flour, thyme, pepper, and add to sausage and onion -cook for 5 min. Add milk and Half and Half to sausage mix and cook for 5 min. Add sauerkraut w/juice and bring to boil, let cool. Add lemon to taste for tartness.
